More than 20 years ago we started brewing honest Indian-style spiced tea at our shop on Capitol Hill. We brewed chai the old-fashioned way, a gallon at a time, using only the finest organic spices and flavorful Assam black tea. People could taste the difference right away, and before long we had customers lining up for our delicious Masala Chai.
Nowadays, we brew in bigger batches, but nothing else has changed much. We sill use the best spices money can buy, and the same delicious Assam tea. We do it all by hand to produce a truly artisanal product that delights our fans in Seattle and beyond.
for one gallon of masala chai you will need:
1 packet of spice (1.5 oz., about 1/2 cup)
1 packet of tea (1.5 oz., about 1/2 cup)
8 oz. granulated sugar (about 1 cup, or to taste)
1 gallon water
1 quart milk, or non-dairy substitute (to taste)
instructions:
Put the spice and sugar in a large pot. Pour one gallon water over both and stir to dissolve the sugar. Bring the pot to a full rolling boil. Turn off, put a lid on the pot, but leave it on the burner to steep for 15 mins. Add the black tea, stir, and cover again to steep for an additional 15 minutes. Stir again, strain, and serve with your choice of milk. Keeps well in the fridge to enjoy any time, hot or iced.
Here's how to do it
Your Chai Kit includes 2 packets of spice (masala), and 2 packets of Assam tea, premeasured to brew a gallon at a time (the kit makes 2 gallons).

Ceylon Cinnamon - Cinnamomum verum, the 'true cinnamon" of Sri Lanka; fair trade certified
Green Cardamom - Elettaria cardamomum, aromatic and expensive, grown in Guatemala
Ginger Root - Zingiber officinale, grown in China; fair trade certified
Clove Buds - Syzygium aromaticum, from Sri Lanka
Fennel Seed - Foeniculum vulgare cooling and soothing to digestion, from Turkey
Black Pepper - Piper nigrum, from the Malabar coast of south India; just a touch
